Learn all you need to know about Gluten free cooking!

Whether you are a coeliac or just prefer to live a gluten free lifestyle, Diana and the professionals at The Avenue prove to you that you can cook gluten free food that is easy to make, nutritious and above all, delicious.

Each class will take on a different theme, so please check the schedule below when selecting your date!

Savoury bakes: (Thursday 30th June)

Just in time for picnic season in this class you will explore buckwheat almond quiche, cheesy chickpea biscuits and oaty crackers. Working with gluten free pastry can be a notoriously crumbly experience but your hosts will share their top tips for success.

Sweet treats: (Thursday 28th July)

In this class you will cover cake, cookies and brownies, all using a range of gluten flours and techniques. You’ll make the most of seasonal summer fruit as simple decorations for your cakes.

Lets go Italian: (Wednesday 31st August)

Gnocchi and Gnudi – a type of naked ravioli – can be easily made gluten free with the right ingredients. You’ll be cooking these with a delicious herby sauce and also trying your hand at farinata – a yummy Ligurian flatbread made from chickpea flour.

Pasta: (Thursday 29th September)

Nothing quite beats fresh pasta! In this class you’ll make two varieties of tagliatelle using different flours, and serve them with a delicious tomato sauce. You’ll finish the class (and course) with an Italian chestnut cake – Castagnaccio.

Gluten Free Flour: (Wednesday 26th October)

In this class you’ll learn about all about the different varieties of flour that can be used if you are following a gluten free diet. You’ll learn how to make your own flour blends, why wholegrains, sprouting and grinding your own flour is a wise nutritional choice and you’ll put your blends to the test in some simple recipes!
